Esnayder Cuartas is a food and drinks entrepreneur and Colombian national who has lived in London and worked in restaurants and the hospitality industry for more than 20 years.

He was the proprietor of Sabor, the leading Latin American restaurant in Islington from 2004 to 2012, which brought modern and imaginative food and drinks from Latin America to this part of North London.
