Our Small Group Workshops give you personalized attention from Milk Street instructors, staff, recipe developers and special guest chefs from all over the world. In these small classes - capped at just 25 attendees - you'll get your questions answered in real time, take on culinary experiments and tastings, brainstorm new applications of the skills you learn and problem solve together with other students. In a world of year-round produce, asparagus remains a messenger of spring, showing up in markets as winter begins to relax its grip. Elegant and luxurious—it takes more than three years to grow to an edible length and it won’t tolerate more than a brief stay in the crisper drawer—it’s ideal for celebratory, colorful recipes. Why then is it so often disappointing when we eat it? In this Small Group Workshop, limited to just 25 people, you’ll learn three techniques that ensure precious spring asparagus always tastes fantastic. First, we’ll teach you how to stagger cooking time and duration to create a lush pasta sauce full of layers of varied asparagus flavor as we make Creamy Asparagus Pasta. Next, we’ll shave asparagus into thin ribbons and use it raw to create al dente buttery textures and bright grassy flavors in our Shaved Asparagus Salad with Lemon, Herbs and Ricotta. Last, we’ll sear-steam asparagus in an infused oil and top it with sauce gribiche, a classic French sauce similar to mayonnaise made with cooked, not raw, egg yolks, and seasoned with herbs and capers. If you think asparagus is a one-hit wonder, this workshop will show you the many different flavors and textures asparagus can have: velvety and rich; snappy and green; tender and smoky. Join us in this special spring Small Group Workshop and learn to make the most of the fleeting asparagus season.
