We’ll be making fresh ceviche and agua chiles using methods and flavor combinations that I personally enjoy making at home.
I’ll show you how I prepare different types of seafood and how to balance flavors to create a fresh, bright, and delicious ceviche.
During class, we’ll work with seafood including shrimp, fish, scallops, and crab meat while learning how to balance citrus, spice, and fresh ingredients to create a flavorful and refreshing ceviche. I’ll show you simple homemade techniques, how I prepare the seafood, and different ways to combine flavors so you can make your own delicious versions at home.
This class is beginner-friendly, relaxed, and welcoming to anyone who loves seafood and wants to learn in a fun environment. I’m not a professional chef — just sharing the recipes, methods, and things I’ve learned along the way.

From Oscar Ruiz: I’m 34 years old, an Army veteran, and currently in college studying to become a welder. Cooking has always been a big part of my life, and I especially love making Mexican dishes. I’m constantly in the kitchen, experimenting, learning new methods, and trying out new recipes. Teaching this class gives me the chance to share that passion and hopefully inspire others to explore and enjoy cooking as much as I do.
