The business idea was born when owner Diane Mejia, in the midst of completing her pastry and culinary degrees, was diagnosed with severe gluten intolerance. Rather than throw in the towel, she decided to pivot to creating pastries and baked goods that she and others with similar dietary restrictions could enjoy. Her love of animals led her to give herself the extra challenge of keeping her recipes vegan-friendly as well. After extensive recipe testing and with the support of friends and family, her dream became a reality, and Dianeopened Mindful Baking Wholesale Kitchen in 2013. She has been bringing peace of mind to customers with food allergies and sensitivities ever since. Based in Chicago’s Ravenswood neighborhood, the Mindful Baking team can be found selling allergy-friendly treats at farmers’ markets and pop-up events across the city and suburbs, and beyond. Mindful Baking products are also sold at numerous Chicago-area cafes and shops. Dianeproudly supports other Chicago-area vegan/cruelty-free businesses and organizations by hosting unique events throughout the year, such as the Vegan Star Catcher Market and Lucha Vegan.
