What we don’t like is chicken that ends up overcooked (we’ve all been there), greasy or bland. Join guest teacher Yasmin Fahr, author of the new book “Cook Simply, Live Fully,” for a livestream class where you’ll learn three brilliant ways to prepare chicken that each highlight the best features of this beloved protein while avoiding its pitfalls. You’ll use bone-in, skin-on chicken legs for Yasmin’s Lemony Ginger Chicken with Potatoes and Onions, a hands-off braise that makes the oven do nearly all the work—no need for the dreaded messy process of browning the chicken first—and produces a broth that she describes as “elixir-like.” Then, you’ll see a very different way to prepare those same cuts as you make Yasmin’s favorite sheet pan dinner, which combines juicy chicken, sweet-tart tomatoes and crunchy croutons for a crowd-pleasing spread. Finally, you’ll use ground chicken to make smashed chicken burgers that deliver big flavor thanks to generous amounts of ginger and scallion—plus two unexpected ingredients that will become must-haves for all your future burgers and meatballs. Served on a toasted brioche bun with a bit of avocado and lime, these burgers are prime for parties, cookouts—or any old weeknight dinner.
