Come learn how to make pasta from Carmella - the owner of Melina's Fresh Pasta.


Learn how to make pasta like a tiny Italian Nonna (or Nonno). Learn how to master the art of crafting handmade tortellini. We will begin with making a fresh egg pasta dough. Next, you will learn how to roll the dough out into thin sheets. Once you become an expert pasta roller, you will move onto making fresh tortellini. Ring shaped Tortellini are a regional specialty of the Emilia-Romagna region.
Bonus Pasta - We will make Spoja Lorda - Dirty Pasta - with the leftover filling and pasta just like they do in Italy.

At the end of the class, we will eat what we make with 2 sauces to accompany the pasta!

We will cook up the pasta together for a tasting at the end of the class. Note: This is typically enough pasta for a light to medium sized meal.

Classes are held at IL LABORATORIO - our new pasta making kitchen located at 3101 Guess Rd. (NOT the pasta shop).

All participants receive a Melina’s Fresh Pasta Recipe Book via email after the class with the recipes from the class.

I have a gift card - how do I register for a class?

If you received this class as a gift, please have your gift card available and call (919) 403-3663 to register and redeem. If you would like to purchase a gift card for a class please visit http://www.melinaspasta.com/giftcards/.

Where do I park?

There is a large parking lot in the complex - you may park in any spot unless there is a sign indicating a reserved space. DO NOT PARK in reserved spaces. Please park perpendicular to the back building where Il Laboratorio is located.

Is it possible to make menu substitutions for allergies?

We will do our best to accommodate food allergies but need to be contacted at least 7 days before the class. Allergens used in the class: Dairy, Wheat, Eggs

What is the minimum age for children to participate?

Children 9 and up are welcome with an adult (all children must be registered for the class separately)

What is the cancellation policy

Classes are non-refundable; however, we can move your registration to a different date if you are unable to make it to the class (must give us 7 days notice). Rescheduling classes for less than 7 days notice only available if we can fill your spot from the waitlist. Email: carmella@melinaspasta.com

Can I bring wine to drink?

You may BYOB and drink during the pasta tasting at the end of the class. No drinking is allowed during the pasta making portion of the class.

How much do we get to eat?

Typically, we have leftovers and there is plenty of pasta to eat. We usually eat around 90 minutes into the class so plan accordingly.

Il Laboratorio - The Cooking Lab by Melina's Fresh Pasta - opened in 2024. Due to high demand for Melina's Fresh Pasta owner, Carmella's, pasta making classes Il Laboratorio was created to offer a dedicated space centered on Pasta Making Classes and regional Italian cooking. While making pasta will still be Carmella's primary focus at Melina's - this new space will allow for more frequent classes to be scheduled. Classes will focus on pasta and sauces from all 20 regions of Italy plus some Italian-American classics. Come learn how to make pasta like a little Italian nonna.
