    Sourdough baking in the summer is challenging. Put your starter in the fridge and it gets overly chilly and tricky to wake up. But leave it out on the counter and it runs the risk of becoming overactive in the summer heat. What’s a baker to do? Ask for help from sourdough expert and author of “A Baker’s Year” and “Flour Power” Tara Jensen, of course. Join Tara at this livestream class to learn how to be a successful and confident sourdough baker all year round. Tara will start by showing you her solutions—some DIY, some just a click away—to staying in control of temperatures, both for your starter and for your doughs and loaves as they proof. Then, she’ll put the theory into practice as she makes a loaf of trail mix bread, a creative loaf that’s studded with peanuts, raisins and chocolate—in other words, all the things you’d want on a brisk hike or at a summery picnic. In the course of just 75 minutes, you’ll see every stage of the home baking process, from feeding your starter to mixing dough, folding, proving, shaping and baking. Plus, since we all have different ideal trail mix blends, you’ll get inspiration from Tara on ways to create countless variations of this bread. About Tara: Tara Jensen, author of “A Baker’s Year” and “Flour Power,” has been baking professionally for over 20 years. She has worked at Red Hen Baking in Middlesex, Vermont; Farm & Sparrow in Asheville, North Carolina; with Jennifer Lapidus at Carolina Ground, also in Asheville; and ran her own bakery, Smoke Signals. Her bread and pies have been featured in publications such as Food & Wine and Bon Appétit, and she teaches bread baking workshops in Virginia, where she lives with her husband and daughter.
