    Homemade tagliatelle noodles. Tender, delicate scallops. Big handfuls of crispy parsley. Join guest teacher Ursula Ferrigno, author of the new book “Cucina del Veneto: Delicious Recipes from Venice & Northeast Italy,” for a class where you’ll be transported to the Veneto, a corner of Northeast Italy that’s bursting at the seams with great food. We’ll take a cue from chefs of this region and make every part of Ursula’s Tagliatelle with Scallops from scratch. That means kneading the dough for a batch of tagliatelle, a wide noodle that sauces well and tangles nicely with seafood, herbs and a light, summery sauce. It also means making your own batch of stock, or brodo, which is the foundation of countless soups and sauces in this part of Italy. With our pasta prepped and brodo ready to go, we put together our elegant summer meal. You’ll learn how to buy fresh scallops like a pro—and what to avoid if buying scallops from frozen. Ursula will prove that fried parsley is the culinary trick that your Italian cooking has been missing all along.     About Ursula: Ursula Ferrigno is an acclaimed food writer and chef. She toured the US, running classes in all Sur la Table stores, is consultant chef to Caffè Nero and has made many appearances on BBC TV.
