      Crispy, crunchy, flavorful, filling and memorable: A great salad can be all this and more. And yet, too many salads are afterthoughts, nothing more than limp greens in an uninspired vinaigrette. Dispense with the dull and bring some strategy to your salad game with guest teacher Theo Kirwan, author of “Saladology: Fresh Ideas for Delicious Salads” (use promo code MILK2024 for 10% off your order). True to the spirit of the study of salads, he’ll start by re-defining what a salad can be. Then, he’ll populate your imagination with three dishes that turn sad salads on their head. You’ll learn two ways to put herbs to work in his crunchy, bright and refreshing cucumber salad with tahini dressing. As you make a potato & egg salad, you’ll learn the two pickled ingredients and two umami bombs that you need to have on hand for well-balanced salads, plus the surefire way to prepare potatoes so that they eagerly absorb that flavor-packed dressing. Finally, Theo will teach you how to introduce flavor contrast where there once was none as he demonstrates how to fry chickpeas, make a toasted dukkah spice blend and serve it all up over creamy yogurt with a pop of juicy summer tomatoes.
