Come on a hands-on immersion into one of the great dishes of Southwest France! Learn to build a true Cassoulet from scratch.

Join Ariane Daguin, for a two and a half hour, hands-on workshop dedicated to cassoulet, the iconic slow-cooked dish of Gascony. More than a recipe, cassoulet is a ritual of patience, layering, and respect for ingredients. 

Together, we will walk through every essential step, from selecting and preparing the beans to understanding the role of each meat and how they come together in a deeply harmonious dish. You will learn how to properly soak and cook the beans for the ideal texture, how to build a rich and balanced broth, and how to prepare and handle the different components that define a true cassoulet. 

We will assemble the dish step by step, discussing the importance of layering, seasoning, and timing. Special attention will be given to the famous crust — how it forms, when to break it, and why it matters. Along the way, Ariane will share techniques, traditions, and a few strong opinions about what makes a cassoulet authentic. 

This workshop is fully participatory. Guests will be involved in each stage of the preparation, from handling ingredients to assembling the final dish. 

At the end of the session, we will gather around the table to enjoy the cassoulet together, as it is meant to be shared — generously, slowly, and in good company.

About the Instructor: 

Ariane Daguin is a French-born entrepreneur, author, and champion of Gascon culinary tradition. Founder of D’Artagnan and an advocate for artisanal food production, she has spent decades connecting farmers, chefs, and home cooks through bold flavors and uncompromising technique. Her style: precise, generous, and unapologetically flavorful.
