In this class you will learn all about sourdough bread baking! This includes how to use a sourdough starter, maintain it & much more.

This class is for people who are interested in starting their own journey on how to bake healthy bread with a sourdough starter.

As this is a Master Class, it's a 5 to 6 hour workshop. We will address the following topics:

1) Explanation of what a sourdough starter is

2) How to create a sourdough starter at home, and talk about some myths about it

3) What ingredients and tools you need for making sourdough bread at home

4) The benefits of sourdough bread baking

5) The chemistry behind sourdough bread

6) Explanation on different grains moderns/ancient grains, their differences – and a demonstration on how to work with them

7) Explanation on how to add seeds or nuts to the bread

8) Scoring and Baking

9) Sourdough discards – what to do with them?

10) Bakers math – how to make your own recipes at home

11) Explanation on fresh flours and milling with a KoMo Mill


While talking about this subjects we will make:


1) Sourdough bread dough from scratch – that you will take home

2) Instructions on how to make your own sourdough starter at home

3) Bake a loaf of sourdough bread – to take home

4) Bake with sourdough discards


The Master Class fee for each attendee includes:


1 Banneton with liner

1 Scoring Knife + Scraper

500 grams freshly milled flour

Lunch

Snacks through the class

Water, Tea & Coffee

Recipes: sourdough bread & using discards

Baked loaf of bread + another to bake
