In this 2-day class, you will dive deep into the craft of natural baking with one of the most renowned and creative teachers in the world of sourdough, Sarah Owens of Ritual Fine Foods.

By learning how to use sourdough leavening to create a variety of baked goods, we will make everything from classic sourdough boule and batard to a hearty seeded rye and wheat pan loaf, fluffy focaccia, and even sourdough scones.

You will be working with regionally grown grains and flours with an emphasis on maximizing whole grains for robust flavors and increased nutritive value. Time will be given to discussing regional grain networks, keeping your starter active and healthy, flour hydration, dough shaping, scoring, and baking in both a wood-fired and electric ovens.

This workshop is suitable for both beginner and intermediate students. All day refreshments, lunch on day one, a baker's breakfast on day two and plenty of tastings from the bakehouse will be available during the workshop.

Timing of class: Saturday August 10, 2023, 10 am to approx. 3 pm ( incl. lunch break) and Sunday August 11, 2023, 9 am with baker's breakfast and talk, to approx. 2 pm, finishing with a curated tasting and time for Q&A.

Please note: All times are estimates and the start and end time of the class will be announced closer to date, depending on the final choices of products Sarah will make in class. Please allow extra time as we work with bread cultures, the weather, temperatures and skill levels in the group. We also like to offer plenty of time for Q&A's and discussion rounds during this workshop.

Where is the school located?

We are located about 35 minutes north of Burlington, Vermont , where you also find the closest international airport and direct trains to New York. Please note that there is no public transportation to Fairfax and taxis/Lyft/Uber are rare, so you would need your own transportation to get to us.

Where can I find accommodation?

Vermont is busy in every season, but especially in the early fall - please book early! 
There are hotels in the quaint town of Saint Albans, in Burlington and several Airbnb's and a campground in the area.  We also have a few recommendations for simple, private rooms (family / home stay) nearby.

What do I need to bring?

Every class is different but you will get more information on what to bring by email about 2 weeks before class date. Please make sure to add the Eventbrite emails to your contacts.

Are your classes suitable for children?

We love kids but our classes are geared towards adults and the content and level is not suitable for children under 16 years of age.

Can you accommodate special diets and allergies?

Please let us know about any dietary preferences or intolerances, we will be happy to accommodate them as best as we can. Important: Taking a class is not recommended for people with food allergies and other allergies due to ever-present cross-contamination.
