It’s time to learn how to break down a whole chicken. It saves money, gives you more versatility and creativity in the kitchen and makes it easy to make your own chicken broth, which is infinitely better than any store-bought option. Join Milk Street’s Matthew Card in this livestream Workshop, and he’ll take a few whole chickens down to boneless, skinless chicken cutlets. Along the way, he’ll show you how to get bone-in, skin-on breasts; boneless, skin-on thighs and everything else in-between. For whole bird enthusiasts, Matt will also show you how to spatchcock, our favorite way to prep a bird for roasting whole. You have the option to break down one or two birds in real time with Matt or watch and leave the butchery for another time. What about the broth? Matt will show you how to use chicken necks, wings, backbones and variety of mix-and-match aromatics to make the best broth in town. As for what to do with all those chicken parts, we’ll provide a selection of our favorite recipes, so you’ll have plenty of options for how to turn those cutlets, thighs and drumsticks into something delicious.


Our small-group Workshops are capped at just 25 attendees and are distinct from our livestream Classes. As such, they are NOT included with Insider membership.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive instructions on how to prepare ingredients and equipment in order to cook along with us.
