Our Small Group Workshops give you personalized attention from Milk Street instructors, staff, recipe developers and special guest chefs from all over the world. In these small classes - capped at just 25 attendees - you'll get your questions answered in real time, take on culinary experiments and tastings, brainstorm new applications of the skills you learn and problem solve together with other students. These are the events for you if you want to really understand the whys of cooking - not just the hows.During our Small Group Workshops, you can ask questions of the teachers and other students and cook along (if you like). What’s on the menu:<ul><li>Turkish Flatbreads — stuffed with spinach and cheese </li><li>Umbrian Flatbreads — stuffed with sausage and broccoli rabe</li></ul>A great sandwich is a perfect eating experience, as nuanced as any five-course meal. But you get to eat it with your hands, and often outside—two prerequisites for excellent summer eating. This workshop, limited to just 25 students, is a celebration of the superlative sandwich for the cook who likes to make everything from scratch, starting with the bread. We’ll make two filled flatbreads—one Turkish and the other Italian—that you can easily recreate any weeknight, from dough to filling, in just over an hour (or under!).We’ll start with the simplest of the flatbreads: Turkish yufka. Made from flour, water, olive oil and salt, these breads are fast and easy to make largely because they are unleavened (that is, without yeast). The breads are cooked on one side only, leaving them pliable and soft and perfect for filling. A filled yufka, folded and toasted in a skillet, becomes Turkish gözleme. We’ll make the most famous gözleme, filled with spinach, herbs, ricotta and feta, in class and give you the recipe for a pork, green olive and feta filling we also adore.Next we’ll add just one ingredient to the yufka recipe—baking powder—and change the cooking method to make a very different flatbread, the Umbrian torta al testo. These equally simple and fast breads are more substantial than yufka. We split them in half and fill them with all manner of ingredients to make hearty sandwiches, like the sausage and broccoli rabe filling we’ll make together (which is based on one with wild foraged herbs that we ate with Silvia Buitoni in Perugia).As we knead, roll, bake and cook, you will learn basic baking science so you know how to make your flatbreads tender or chewy, dense or light, puffed up into pockets or smoothly foldable. The perfect sandwich, after all, starts with great bread.Our small-group Workshops are capped at just 25 attendees and are distinct from our livestream Classes.
