Part classroom, part playground and all kitchen, Christopher Kimball's Milk Street is the place to learn to change the way you cook. Our Small Group Workshops give you personalized attention from Milk Street instructors, staff, recipe developers and special guest chefs from all over the world. In these small classes - capped at just 25 attendees - you'll get your questions answered in real time, take on culinary experiments and tastings, brainstorm new applications of the skills you learn and problem solve together with other students. These are the events for you if you want to really understand the whys of cooking - not just the hows.During our Small Group Workshops, you can ask questions of the teachers and other students and cook along (if you like). Come learn the fundamentals of flatbread while baking three savory breads!

Baking bread gets a bad rap as a finicky pursuit, dependent on years of experience tinkering with yeasts, flours and ovens. In reality, it&#x27;s not that hard at all, and the results are well worth the minimal effort. In this small group workshop, limited to 25 people, you’ll see how flatbreads can be the perfect fit for (fast) weekday dinners. In this workshop, you’ll learn:<ul><li>Baking science—With just a little knowledge about gluten and yeast, you’ll understand how to make your flatbreads tender or chewy, dense or light, puffed up into pockets or smoothly foldable. </li><li>Shaping and mixing—We will show you flatbreads that you can make by hand (really, you can make them all by hand) and ones that use a standing mixer or a food processor, for speed and ease.</li><li>Flavor development—We’re going to show you how to to develop complex flavors quickly thanks to ingredients like honey, whole-grain flours, gluten-free grains and yogurt. </li></ul>We’ll start the workshop with the simplest of the flatbreads: a yogurt-enriched bread that comes together in 40 minutes from start to finish. This lesson teaches fundamentals about baking science and how to use it to make great-tasting breads quickly. We’ll build on these lessons and explore new topics as we work our way through pajeon, Korean scallion pancakes. They use a mixture of wheat and other flours to achieve a very different texture from the yogurt flatbreads and are filled with fresh aromatics. Last, we’ll make socca, a French gluten-free chickpea flatbread that can serve as a flavor-packed side dish or base for pizza toppings. Want to give this class as a gift?
