Don’t call it “discard.” Sourdough starter—whether freshly fed or not—is a profoundly flavorful fermented ingredient. In our opinion, every home cook should have a jar of it in their fridge, even if you never intend to bake a loaf of bread. Milk Street’s April Dodd does use her starter to make bread on occasion, but more often, she’s pulling it out to do about 20 other jobs in the kitchen. In this livestream Small Group Workshop, you’ll see how to treat sourdough starter more like a condiment—akin to miso or yogurt—and less like a demanding pet. We’re not just chucking sourdough starter into pancakes or muffins here, though we will talk through the simple math of adding it to nearly any baked good. Instead, we’ll focus on techniques that actually reduce the total number of ingredients you need and that simplify your weeknight cooking. You’ll take advantage of the big flavor of starter to make ultra-quick kimchi and scallion pancakes loaded with fermented goodness. We’ll seize on its starch content to produce golden-brown, crispy breading for tempura-style fried sweet potatoes, zucchini and mushrooms. And we’ll call on its protein structure and leavening ability to make the lightest, most tender dumplings you’ve ever had in a bowl of chicken and dumpling soup. Plus, as a bonus, you’ll get April’s recipe for granola, whose crispy clusters are thanks to sourdough starter.
About April: April Dodd is the Associate Director of Education at Milk Street, where she runs the livestream, in-person and private events programs. April began her culinary career at Middlebury College, where she ran a pop-up restaurant and a summer food preservation program. Since then, her culinary pursuits have included working in an organic bakery in France; developing recipes for a cupcake shop and founding a culinary skills training program in Nairobi, Kenya; working as a consultant to the UN Food and Agriculture Organization and a stint as the chef at a women-only retirement community in her hometown of Lexington, KY.
