Our Small Group Workshops give you personalized attention from Milk Street instructors, staff, recipe developers and special guest chefs from all over the world. In these small classes - capped at just 25 attendees - you'll get your questions answered in real time, take on culinary experiments and tastings, brainstorm new applications of the skills you learn and problem solve together with other students. These are the events for you if you want to really understand the whys of cooking - not just the hows.During our Small Group Workshops, you can ask questions of the teachers and other students and cook along (if you like). Join us to unpack one of the most common ingredients used in the kitchen and found around the world!

Salt—the common denominator in most recipes and the one ingredient found in everyone’s home—is still a mystery to many home cooks! Join Milk Street’s Matthew Card and Rosemary Gill for this Small Group Workshop, limited to 25 people, to debunk myths, prove rules and learn how to use salt wisely for better meals. We’ll start with the basics: tasting and explaining the major categories of salt: kosher, table, sea, finishing, pink, black and more. When do you use each? Do you need more than one? You’ll find out. But what does salt do—besides make our food taste good—and how much should I use, and when? We’ll run some experiments with chicken, zucchini and tomatoes to discover the answers. Need a low-salt diet? We’ll discuss ways to reduce salt without sacrificing flavor or science. Once we understand salt’s scientific role in the kitchen, we’ll approach it more creatively and make two flavored salts, one highlighting bright herbs and the other one using rich, dry spices. By the end of 90 minutes, you’ll not only be a better, more informed cook, you’ll also have a full meal of herb-roasted chicken, tomato salad and zucchini fritters with a garlicky yogurt dipping sauce. Our small-group Workshops are capped at just 25 attendees and are distinct from our livestream Classes. As such, they are NOT included with Insider membership. Want to give this class as a gift?
