Description:
In Jordan, we were taught to use an upside-down bowl to stretch dough to the point of being see-through, so thin that it cooks almost instantly in a super-hot cast iron pan. These shrak, a staple dish of Jordanian Bedouins, are great dunked in olive oil or used to scoop up hearty stews. In Morocco, we learned to use boiling water to gelatinize the starches in high-gluten semolina flour to yield a pliable dough that cooks up easily in a skillet; among Milk Street’s recipe developers, these harcha became fondly known as “Moroccan English muffins.” Our new favorite Lebanese-Syrian flatbreads came to us, a little surprisingly, at a restaurant in São Paulo, where immigrants have made esfihas— pizza-like yeasted rounds topped with olive oil, tomatoes and sumac—a local staple.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive instructions on how to prepare ingredients and equipment in order to cook along with us.
