Cooking outside signifies summer. The very smell of fire gets us hungry. And yet so many of us are unsure how to cook well on a grill. Gas or charcoal? Briquettes or lump wood? Lid on or off? Red hot coals or actual flames? Join Matthew Card, Milk Street’s creative director of recipes and products, to learn how he grills, which combines a deep knowledge of food with the practicality of feeding a family of four. In his own words, “Grilling means big, simple flavors that require minimal work, and are ideal for entertaining. Negroni strongly recommended.”
In this 25-person Workshop, we’ll learn to prep two kinds of grills— charcoal and gas -- and use the heat progressively from either to create a dinner of skirt steak with garlic-herb oil, bulgur with grilled scallions and tomato, and a grilled vegetable salad. As we work, you’ll learn Matt’s grilling gadget basics, how he uses wood and smoke as a flavoring—not just as a cooking tool or by-product—and his “don’t waste any heat!” grilling philosophy.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive instructions on how to prepare ingredients and equipment in order to cook along with us.
