Our Small Group Workshops give you personalized attention from Milk Street instructors, staff, recipe developers and special guest chefs from all over the world. In these small classes - capped at just 25 attendees - you'll get your questions answered in real time, take on culinary experiments and tastings, brainstorm new applications of the skills you learn and problem solve together with other students. These are the events for you if you want to really understand the whys of cooking - not just the hows.During our Small Group Workshops, you can ask questions of the teachers and other students and cook along (if you like). Join us to crack open some coconuts and learn about how to use all of the components that make up a coconut.

Coconut, also referred to as the tree of life, is one of the most versatile plants in the world. The majority of the tree is utilized for various consumer products, but all the culinary magic is in the fruit. But wait—is the coconut a fruit, nut or seed? In this Small Group Workshop, limited to just 25 people we will explore this question as well as the coconut itself from every angle. We’ll start by tasting all things coconut—milk, water, cream, dried flakes and more—and talk about the different uses of each, which can be used interchangeably and which are best not substituted. As we taste, you will learn about the anatomy and life cycle of this resourceful ingredient. Next, we’ll crack open some coconuts to show you how to properly cut and extract the most coconut water and fresh meat and we’ll examine how maturity affects the thickness, sweetness and texture of coconuts so you can always choose the best one for your needs. As for the cooking part of class, we’ll make two kinds of homemade coconut milk and use that milk to build a sweet, spicy and savory coconut relish, inspired by Sri Lankan pol sambol and perfect for topping flatbreads, curries and grilled meats. And for a final sweet treat, we’ll make Mango Coconut Tart. As the summertime is quickly approaching, this workshop will be the perfect way to set your sights on something tropical. Note: We are not making a full meal in this workshop. If you’d like to use the coconut relish in your dinner after class, we recommend preparing some simple grilled or roasted chicken or fish before class or making a curry.Our small-group Workshops are capped at just 25 attendees and are distinct from our livestream Classes.
