    By popular demand, guest chef Bronwen Wyatt is back for another livestream cake decorating workshop at the Milk Street Cooking School. This time, her mission is to transform a single-layer cake into a showstopping dessert that your friends will think came from a fancy bakery. We'll start with Bronwen's go-to recipe for carrot cake that's both rich and light. Because great cakes start with great ingredients, she'll talk you through how to choose, store and bake with freshly-milled flours - and how to succeed with standard grocery store options, too. You'll prepare a batch of silky Swiss Meringue Buttercream, a frosting option that's a far cry from its over-sweet American cousin, especially when you add in a dollop of one of Bronwen's favorite secret ingredients. Then, it's time to try your hand at frosting. She'll introduce you to her set of simple cake decorating tools and walk you through the foundational decorating steps before demonstrating - as many times as you need to see it! - her signature swoop, a flourish that instantly turns any cake into a showstopper. Finally, you'll get a primer on flowers that are cake-safe and learn how to source and store them before incorporating them into artistic, colorful cakes.

About Bronwen: Bronwen Wyatt is a pastry chef and owner of Bayou Saint Cake. Known for her whimsical layer cakes garnished with edible flowers, Wyatt is constantly inspired by the Louisiana seasons, using local produce to create inventive, contemporary sweets. She lives with her wife and two cats in a 100-year old house in New Orleans.

Note: You'll get the most out of this workshop if you are willing to invest in an offset spatula and a small cake turntable. They are not required, but recommended for all your future cake baking endeavors!

One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive instructions on how to prepare ingredients and equipment in order to cook along with us.
