About Chef Mads:

Mads Refslund is a Danish-born chef renowned for his pioneering contributions to the New Nordic Cuisine movement. Born on October 24, 1974, in Denmark, Refslund's culinary journey has been marked by a passion for innovative and sustainable cooking.

Refslund gained international recognition as one of the co-founders of Noma, a restaurant located in Copenhagen, Denmark, which quickly rose to prominence and earned multiple Michelin stars. Noma, under the leadership of Refslund and co-founder René Redzepi, became a global culinary sensation, known for its avant-garde approach to gastronomy and a commitment to utilizing locally sourced, seasonal ingredients.
