Before World War II, The Jewish community of Salonica, Greece was so thriving that the language used for trade was Ladino and all business shut down on Shabbat. A fire that began with a roasting eggplant burned the Jewish Quarter to the ground in 1917. The community successfully rebuilt itself, only to be wiped out by the Nazis in 1943. Come and learn about this incredible, musical community of Sephardi and Romaniote Jews whose recipes, songs and language are our duty to preserve.


Ariella Amshalem is an American-Israeli Chef and Chef Instructor. She is a food history enthusiast with a Graduate Certificate from Boston University in Food Studies.
