Have you wanted to learn how to make homemade pasta but felt intimidated? Food writer and chef-instructor Shawnie Kelley shares pasta techniques and recipes that make the process fun and accessible. Learn how to pull together the dough with perfect consistency, then cut and form noodles of various shapes and sizes. This demonstration allows the class to practice using the hand crank and KitchenAid pasta makers and extruder to make tube noodles. We also learn techniques for hand-cutting, shaping, filling, drying, and freezing pasta. The discussion also considers how and why to pair sauces with specific shapes. At the end of class, you can enjoy your pasta with two paired sauces and a glass of wine.

You will make:

· Pasta dough

· Spinach ricotta filling

· Traditional Marinara Sauce

· Genoese Pesto - Demo from Chef Shawnie

· Burst Tomato Sauce
