We get it: pasta salad doesn’t have the best reputation. From underseasoned sauces to overcooked noodles, pasta salad can go wrong in a lot of ways. But here’s the thing: there are also a lot of ways for pasta salad to go really right. Join guest teacher and self-proclaimed pasta salad enthusiast Dan Pashman—the guy behind The Sporkful and the new cookbook “Anything’s Pastable”—for a class where you’ll leave bland, forgettable pasta salads behind and turn to ones that are fresh and bright, filled with texture contrast and big flavor. Dan will walk you though his logic of which beloved hot pasta dishes make great pasta salads and which simply don’t translate well. He’ll give you guidance on how to pick the right pasta shape for every pasta salad puzzle. Then, to prove the power of his pasta salad philosophy, Dan will make two very different recipes. First up is a Crispy Gnocchi Salad in which the gnocchi soak up a punchy, Morocco-inspired dressing and tangle with tomato, preserved lemon and pepperoncini. Then, Dan puts his signature spin on puttanesca with a pasta salad that has earned the designation of Sleeper Hit—one of only five—from his new cookbook. About Dan: Dan Pashman is the two-time James Beard and Webby Award winning creator and host of The Sporkful podcast, which he says is not for foodies, it's for eaters.
