Welcome to our Pasta Making Class - Southern Italian Pastas and Sauces

Owner of Melina's Fresh Pasta & Il Laboratorio, Carmella, and her family are from Calabria - right on the toe of the Italian boot. In this class Carmella will teach you the hand rolled pasta making traditions of Southern Italy.

Made with flour and water and then shaped by hand, these chewy pastas pair well with any sauce. During the class we will make the dough and shapes from 3 Southern Italian regions. We will demonstrate how to make quick traditional regional sauces for each pasta shape.

Calabria – Fusilli with Aglio, Olio e Peperoncino

Campania – Cavatelli with pomodoro (tomato) sauce

Abruzzo - Anellini alla Pecorara (vegetable sauce)

We eat what we make! Note: This is typically enough pasta for a light to medium sized meal.

Classes are held at IL LABORATORIO - our new pasta making kitchen located at 3101 Guess Rd. (NOT the pasta shop). All participants receive a Class Recipe Book via email with the recipes from the class.

I have a gift card - how do I register for a class?

If you received this class as a gift, please have your gift card available and call (919) 403-3663 to register and redeem. If you would like to purchase a gift card for a class please visit http://www.melinaspasta.com/giftcards/.

Where do I park?

There is a large parking lot in the complex - you may park in any spot unless there is a sign indicating a reserved space. DO NOT PARK in reserved spaces. Please park perpendicular to the back building where Il Laboratorio is located.

Is it possible to make menu substitutions for allergies?

We will try our best but you must contact us in advance. Allergens used in the class: Dairy, Wheat, Eggs

What is the minimum age for children to participate?

Children 9 and up are welcome with an adult (all children must be registered for the class separately)

What is the cancellation policy

Classes are non-refundable; however, we can move your registration to a different date if you are unable to make it to the class (must give us 7 days notice). Rescheduling classes for less than 7 days notice only available if we can fill your spot from the waitlist. Email: carmella@melinaspasta.com

Can I bring wine to drink?

You may BYOB and drink during the pasta tasting at the end of the class. No drinking is allowed during the pasta making portion of the class.

How much do we get to eat?

Typically, we have leftovers and there is plenty of pasta to eat. We usually eat around 90 minutes into the class so plan accordingly.

Where are classes held?

Due to high demand for Melina's Fresh Pasta owner, Carmella's, pasta making classes Il Laboratorio was created to offer a dedicated space centered on Pasta Making Classes and regional Italian cooking. While making pasta will still be Carmella's primary focus at Melina's - this new space will allow for more frequent classes to be scheduled. Classes will focus on pasta and sauces from all 20 regions of Italy plus some Italian-American classics. Come learn how to make pasta like a little Italian nonna.
