January is the time of big culinary goals and kitchen resets. We aspire to finally learn to use a pressure cooker, we plan to study the nuances of sourdough, we dream of cranking out homemade pasta: it all involves new tools and a whole lot of time. Instead, what if we told you that in this new year it will be possible to save countless hours by using an appliance that you already have?

Well, it’s true. In this livestream class, we’ll turn to the microwave to make four fundamental, building-block dishes that will prepare you to creatively mix and match all year long. You’ll poach chicken in milk to keep it tender and succulent. You’ll cook fish in the microwave—that’s right: you’re about to learn that when you cook fish in the right dishes, it won’t make your kitchen smell fishy at all. You’ll make rice without ever turning on your stove, preventing dreaded boil-overs and cursed burnt bottoms. You’ll braise greens in record time by using the concentrated, efficient power of the microwave to render them tender and silky. And, as a bonus, we’ll clue you in to the surprising ease of toasting nuts in the microwave. In the downtime we gain, we’ll whip up a punchy chili-sesame dressing that’s composed entirely of pantry ingredients. When you serve up bowls of tender rice topped with a perfectly cooked protein and nutrient-rich greens, drizzled with a bold sauce and topped with crunchy toasted peanuts, you might not even believe you made it in the microwave. Oh, and did we mention that, when you can store your feast in the same dishes you cooked and served it in, there are no dirty dishes at the end?

After class, you will receive a recording of the event, as well as a folder of recipes and resources that we discuss during the event. Class recordings are available to all registered attendees for two weeks following each event.

Payments for Milk Street live stream classes are non-refundable. If you find yourself unable to attend, you may transfer the ticket to someone else, but we are unable to refund fees and all payments are final. Classes are subject to cancellation at any time. In the case of cancellation by the event organizer, all paid tickets will be fully refunded.
