Welcome to Malta, the tiny Mediterranean country located smack dab in the middle of the Mediterranean. What Malta lacks in size it makes up for in culinary diversity, which has been shaped by centuries of interaction with Italy, France, North Africa and Great Britain. Join guest teacher Simon Bajada, author of “Malta: Mediterranean Recipes from the Islands” for a livestream class where you’ll be transported to this completely unique island nation. You’ll get a taste of Malta’s obsession with fish as you prepare arjoli, a dip that combines rich tuna with ripe summer tomatoes and briny olives—and you’ll learn how to make the recipe your own with the addition of capers, mint, sun-dried tomatoes and more. In our main course, you’ll use milk —yes, milk—to tenderize eggplant before roasting it and tossing it in an a sweet and sour dressing. Finally, you’ll learn about traditional Maltese coffee and transform its flavors into a granita whose creamy texture comes from an unexpected secret ingredient. Served alongside whipped, gently sweetened ricotta, this dessert is like a summery Maltese version of tiramisu. You’ll come away from this class with a three-course menu that changes the way you think about Mediterranean food.

About Simon: Simon Bajada is a food and travel photographer and writer with Maltese heritage living in Sweden. He has authored four cookbooks – The New Nordic (2015), Nordic Light (2016), Baltic (2019) and Malta (2023). He has worked as a chef, food stylist, recipe developer and photographer and has a Diploma in International Hotel Management and a Diploma in Le Cordon Bleu cookery.
