    Certain foods—tacos, sandwiches, dinner salads (yes! dinner salads)—are more than delicious, comforting or convenient. They are perfect. A mixture of textures, flavors and sensations, they embody ideal cooking theory and technique—when they're made right. In this livestream cooking class taught by Director of Education Rosemary Gill, you'll make two summer dinner salads—Chicken Salmoriglio with Watercress and Pita and Chickpea Salad with Yogurt and Mint—that also contain our most essential cooking lessons and a few advanced ones. You'll learn theory and principles like how to layer flavor, think strategically about texture, make smart substitutions and employ high-impact ingredients with the perfect balance of gusto and restraint. And on the technique side, you'll practice basic and more advanced knife skills, cooking with spices and working with different kinds of heat to achieve a range of flavors and textures. At the end of 75 minutes, you'll leave class as a better, more confident cook—with a sensational dinner salad or two ready to eat.

    This event has limited spots and you must register in advance via Eventbrite in order to attend. One sign-up covers one device. Payments for Milk Street livestream events are non-refundable.
