Get to Know Your Instructor

Tom “Doc” Lewis is a longtime Graham, Texas educator, mentor, and small business owner whose career reflects a deep commitment to both community service and craftsmanship. For 35 years, he served as an athletic trainer with Graham ISD, where he became a trusted presence for generations of student-athletes. Known for his steady guidance and care, Doc played a vital role in supporting the health, performance, and well-being of countless young people before retiring from education.

Following his retirement, Lewis continued his dedication to school safety by completing training at the San Antonio Police Academy and serving as a School Marshal for Graham ISD—further demonstrating his commitment to protecting and supporting his community.

A chance connection would later lead him in an entirely new direction. After meeting Kevin Wenzel, founder of Wiseman House Chocolates in Hico, Texas, Lewis discovered a passion for the art of chocolate making. Fascinated by the creativity and precision of the craft, he spent three years studying under Wenzel, learning the process from one of the best in the business. What began as curiosity quickly turned into a true calling.

Encouraged by Wenzel to pursue his own vision, Lewis brought his newfound passion back to Graham and founded Salt Creek Guns and Chocolate—a unique business that blends tradition, craftsmanship, and personality in a way that reflects Doc himself. Today, he continues to serve his community in a new capacity, offering high-quality products and a story as rich as the chocolate he creates.
