Cocina Vegetariana in Mexico.

Nationalist and Public Health programs in Mexico were instrumental in promoting vegetarianism during the 20th century.

One cookbook that emerged from this movement was Josefina Velázquez de León's Cocina Vegetariana.

In this class, we will prepare "Ensalada de Crisantemas," a dish from Josefina's cookbook, and discuss how her work contributed to the nationalist public health movement of that period.

Guest Speaker: Denise Favela, home cook and ethnographer focusing on Mexican and Mexican American foodways.
