    Don’t let the meat see all the heat. Vegetables shine when kissed by smoky flavors and crisped over high heat, too. In this 75-minute livestream class taught by Milk Street’s April Dodd, you will learn two techniques for infusing your summer vegetable sides and dips with the charred flavor we associate with outside dining, summer parties and great food. We wish it were as simple as tossing them on the grill, but it’s actually a somewhat challenging affair to grill or char vegetables. Even small pieces of potato, cauliflower, squash or beet tend to scorch outside before becoming tender inside. But we love a challenge and found two ways to ensure great texture and fabulous smoky flavor. April will teach them both to you as you make Grilled Mustard-Herb Potato Salad and Charred Zucchini Dip with Tahini and Lemon. April will cook inside, proving that you don’t need a grill to create the smoky flavors we all love in the summer. If you love to cook outdoors, don’t fret—the trick to grilling great vegetables starts inside for everyone. April will also walk you through how to use the same techniques with different vegetables—and some other kinds of plants—and suggest flavor pairings for each.
