Croissants, profiteroles, crème brûlée, chocolate fondant cake: we love French desserts. But too often, the recipes for them produce enormous quantities and come with intimidating, complex instructions. It doesn’t have to be that way. Join guest chef Sylvie Gruber, author of the new cookbook “Bite-Sized French Pastries,” for a livestream class where you’ll learn a set of key techniques and ingredients that put classic French pastries well within reach—and produce quantities you actually want to eat. We start with one of the fundamentals of French pastry, a pâte sablée—which literally means “sandy crust”—that’s manages to be buttery but not greasy and delicate but not too sandy. Containing just four common ingredients, a pâte sablée is the start of countless French dishes, so you need to know how to whip up a good one. Sylvie will show you how to measure, mix and shape your crust like a pro, providing instructions as we go for miniature tartlets and for larger showstopper tarts. Our filling of the day also sounds fancy: Crème d'Amande, or almond cream. But our little secret is that almond cream also has just four ingredients, can be made ahead and is easy to riff on. We put it all together with some fresh fruit—Sylvie loves blueberries, but you can choose the berry or summer fruit of your liking—and a quick bake to produce a Blueberry Almond Tartlet that wouldn't look out of place in the display case of an upscale French bakery. About Sylvie: Sylvie Gruber is the creator of the blog A Baking Journey, where she shares tutorials and beginner pastry and dessert recipes for home bakers. She is certified in Classic French Pastry Training. Born in Belgium, Sylvie currently resides in Melbourne, Australia, with her family. “Bite-Sized French Pastries for Beginner Chefs” is her first cookbook.
