French Basque Cuisine

JUMP – or Jack’s Urban Meeting Place – is a not-for-profit, interactive creative center and community gathering place in the heart of downtown Boise. JUMP is both a place and thing – a lively fusion of environment, experiences and surprises designed to spark interests and uncover talents you may not even know you have. At JUMP, anyone can explore, learn or tinker in one of the activity studios, collaborate or celebrate in the gathering spaces, or relax in the park or amphitheater – all while enjoying a kaleidoscope of ever-changing programs and activities designed to inspire. Our vision is to let this space cultivate the potential in all of us so that we can live a better shared future.

<H2 CLASS="MsoNormal">Northern Basque cuisine has a unique French influence.  Learn about this rich culture and history and prepare a delicious menu with the guidance of guest chef <A HREF="https://www.youtube.com/watch?v=pfWc_tdWXFY" TARGET="_blank" DATA-MSYS-CLICKTRACK="0" REL="nofollow noopener noreferrer">Jean Flesher</A> in this demonstrative and hands-on program:</H2>

<H3 CLASS="MsoNormal">Axoa veal stew with espelette pepper</H3>
<H3 CLASS="MsoNormal">Basque style roast duck with potatoes fried in duck fat </H3>
<H3 CLASS="MsoNormal">Short cake with rum marinated peaches and cream</H3>
<H2 CLASS="MsoNormal">After cooking we'll enjoy this delicious shared meal together. Ages 13 and up. Beverages available for purchase. Recipes to take home. Registration ends Wednesday, February 19th. </H2>

What to Expect: We'll start with an introduction and discussion of the Basque culture and history, followed by cooking demonstrations by the chef and hands-on preparations by the participants. When we finish cooking we’ll eat together.  Please specify during ticket registration if you have any food allergies and/or dietary restrictions.

Jean Flesher is a prominent member of the Basque Community hailing from Salt Lake City, Utah. His Basque heritage is from Iparralde, or French Basque Country. Jean became involved in the Basque culture from a young age, learning dance and music which progressed into putting together a band and playing accordion for public dances and groups. This allowed him to travel and play music for many events in the Western US, helping out wherever possible to preserve and promote the Basque Culture in the United States.
What inspires you?
“As far as cooking, I am inspired by eating. I like to eat good, healthy, tasty food, but when I was younger I couldn’t afford to go out often, so I learned how to make the dishes I really enjoyed. My mother was a cook in a French chateau and a Basque hotel, so I was always around great food. Cooking and maintaining the Basque culture go hand in hand in the most delicious way!"

JUMP is a dynamic and innovative space and safety is our first priority.  Please monitor your children and keep them safe at all times.
Personal Release Statement: I understand that the activities and services related to my participation may have an element of hazard or inherent danger and I take full responsibility for my actions and physical condition. I agree to release, indemnify and hold harmless JUMP and its directors, officers, contractors and employees from any liability loss, cost or expense (including, but not limited to, attorney’s fees, medical and ambulance costs) that I may incur while participating in the activities. JUMP will not tolerate any unlawful use of copyright material. Liability for such unauthorized use shall rest solely with the producer. The participant further agrees to hold harmless JUMP for damages arising out of such claims. I assume the liability of and agree to compensate JUMP for any damages other than normal wear and tear of the facility and equipment. When entering the JUMP premises, you are entering an area where photography, audio and video recording will occur. By entering these premises, you consent to all recording media and its release, publication, exhibition or reproduction to be used for any JUMP purpose. I further waive my rights to all claims in connection with any JUMP publication, regardless of its purpose. JUMP is not responsible for replacing lost, misplaced, stolen or damaged belongings and valuables; therefore, JUMP recommends that visitors bring only essential items to the facility.
What are my transport/parking options getting to the event?
You may bus, bike, drive, walk, skip, etc. Check Boise's bus schedule at <A HREF="http://www.valleyride.org./" TARGET="_blank" DATA-MSYS-CLICKTRACK="0" REL="nofollow noopener noreferrer">www.valleyride.org</A>. We love bikers and have bike racks to secure your ride. If you plan to drive, paid parking is available on the 3rd and 4th levels of the JUMP parking garage or in Simplot's below ground parking garage, both accessible from the Myrtle Street entrance located between 11th and 9th Streets. Please note, the below ground parking garage is only available after 4PM until 6AM on weekdays and all day on weekends. Credit/debit cards accepted only. 
Do you have accommodations for people with disabilities?
Absolutely.  What is the refund policy?
We depend on your enrollment for a successful class so please plan your schedule carefully. Classes which do not meet minimum enrollment are subject to cancellation. Refunds are issued in full if the class or program is cancelled, if you cancel at least seven days before the starting date of the class, or for documented medical reasons. Please email <A HREF="mailto:jess.libes@jumpboise.org" TARGET="_blank" REL="nofollow noopener noreferrer">jess.libes@jumpboise.org</A> to request a refund.
