A warm welcome begins with classic French gougères, filled with Délice de Bourgogne and accented by fig–balsamic reduction and micro amaranth.
First Course | The Art of Pairing
This interactive course invites guests to explore how different flavor elements transform the way wine is perceived. A single wine is paired with a composed tasting plate of small bites, each highlighting a distinct flavor profile: Sweet (dark chocolate honeycomb) • Fat & Salt (Leonora goat cheese mousee, salted brioche) • Acid (savory lemon sabayon) • Umami (crab-stuffed mushroom)
Entrée | Alpine Depth & Old-World Elegance
The centerpiece of the evening features breaded veal wrapped in French country ham, layered with 24-month aged Comté, sautéed spinach, and champignons de Paris, finished with a herbed Cabernet glacé.
