As we make Chipotle Shrimp, we’ll demonstrate a two-step cooking technique—the one-sided sear, followed by a gentle simmer—that achieves perfect doneness and produces shrimp nicely coated in a bold, flavorful sauce. Then, you’ll learn how simple and effective it is to poach shrimp—using only residual heat—as we make a Thai-style Grapefruit Salad with Shrimp. Along the way, you’ll learn best practices about cooking with shrimp, including how to purchase, thaw, shell and devein.
