Changes in both technology and privacy laws are frequent, so just addressing today's challenges (without looking ahead) isn't practical.

Are there any COVID-19 protocols in place when entering the Google Chelsea Market offices?

At Google NYC, safety remains a top priority and the team there will continue to monitor local health data closely; guidelines are subject to change. Google requires everyone onsite to be fully vaccinated for COVID-19 and provide proof of vaccination upon arrival.
