Pesto, aïoli, nước chấm, coulis, sambal, picadillo—what do all these dishes have in common? Each of them is a sauce that magically upgrades everyday meals. With so many sauces from all over the world to choose from, it makes you wish they were all compiled in one handy place—which is exactly what guest chef Ashley Boyd has done in her new book, “Saucy.” In this livestream class with Ashley, you’ll make four very different sauces, each with a completely different combination of savory, salty, sweet, spicy, tangy and herbal flavors. You’ll make a batch of hottest condiment on the block, chili crisp, but with rich, nutty coconut. Toss your chili crisp on everything from roasted potatoes to scrambled eggs to ice cream (yes, ice cream) to turn ho-hum dishes into something special. We’ll whip up a batch of pesto made with pistachio, rather than the more traditional pine nuts, and get at least a dozen of Ashley’s favorite ways to use pesto beyond pasta. You’ll learn to balance sweet and savory as you make an apricot miso glaze that’s perfect for a batch of chicken wings or brushed over a summer fruit galette. And you’ll tap into our French side as we make a fruit-forward coulis infused with fresh herbs. As we cook, you’ll learn how technique—whether it’s blending, reducing, emulsifying or infusing—defines the texture and flavor of each of these sauces. Combine these fundamental techniques with a few confident, creative flavor combinations and you’re set for a lifetime of successful saucing.

About Ashley: Author of the cookbook "Saucy" (Use code MILK2024 for 10% off your order) and visionary behind the blog Pink Owl Kitchen, Ashley Boyd shares her culinary expertise by offering a collection of comforting recipes inspired by her Southern heritage. Since her teenage years, Ashley has been on a mission to preserve her youth's traditional recipes, adapting them for modern cooks to keep them accessible and delightful. Outside of the kitchen, she treasures moments spent with her son and husband, and she actively supports addiction recovery causes.
