What does a truly local food system look like? And what can we learn when we pay closer attention to the land, the seasons, and the people who bring food from them to our tables?
Join EdibleDC and Slow Food DC at Poplar, a Brightwood Park restaurant inspired by the tulip poplars of Rock Creek and rooted in foraged and locally sourced ingredients. Chef Iulian Fortu’s ever-changing menu draws from what local farms, forests, and waterways have to offer, creating a distinctly Mid-Atlantic expression of place.
Chef Iulian has put together a menu that showcases the bounty of the region:
Sunchoke Soup, Juniper Spice Crumble, Acorn Oil
Wild Chesapeake Bay Blue Catfish Fritters, Winter Tomato and Sumac Chutney, Potomac Pear
Roasted Maitake, Pickled Squash, Porcini Mousse
Free Range Kelly Bronze Turkey with Mid-Atlantic Mole and Heirloom Grits
Wild Persimmon Bread Pudding, Candy Cap Anglaise
Every menu item has at least one item you can forage in the Mid-Atlantic!
Over a shared meal, we’ll explore the connections between landscape, agriculture, foraging, cooking, and community, with conversation led by Slow Food DC and the team at Poplar.
This is an evening about more than what’s on the plate. It’s an invitation to think differently about where our food comes from, who produces it, and how we can build a more connected local food system.
