Deer Processing Workshop - Sabattus

We are biologists, game wardens, and educators all in on a common mission: responsible, safe enjoyment of the Maine outdoors. We believe a healthy ecosystem makes life better for all the fish, wildlife, and people who call Maine home, as well as for the visitors who call it Vacationland. While MDIFW is a state agency, our work is funded by sportsmen and outdoorspeople. Our revenue comes through the sale of hunting and fishing licenses/permits, boat, snowmobile, and ATV registrations, as well as taxes on hunting and fishing gear. The more people who actively enjoy Maine's natural resources, the more ability we have to enhance, preserve, and protect them for the future.Basically, we're all in this together. Biologists. Game wardens. Educators. And you – the hunters, fishermen, and everyday adventurers who support our work. For recreation, for hunting, for fishing, for science, or just for fun: we're all in for the Maine outdoors.

Learn better meat handling practices, cooking techniques, and preparations for wild game meat and learn how to process your next deer.

Sabattus Deer Processing

Wild game meats can be sometimes referred to as "gamey" or tough, but through better meat handling practices and a variety of cooking techniques and preparations, you have the power to turn a picky eater into a game connoisseur. MDIFW has partnered with Sabattus Deer Cutters to bring you this in demand workshop. There is a $100/person fee (payable to Sabbattus Deer Cutters) required.Once you harvest a deer, the task of processing it may seem daunting. Understanding how to safely and efficiently process your venison will allow you to maximize your harvest in both yield and the quality of meat. Oftentimes, lesser known cuts are discarded or left in the woods. Knowing what cuts are best for various applications in the kitchen can not only broaden your culinary horizons and improve your table fare, but also helps you utilize every part of the animal. This will ensure a full freezer with minimal waste. By understanding what cuts are best for roasting, sausage making, curing, or braising you can enjoy more and waste less. This workshop will be led by experienced wild and domestic meat cutters from Sabattus Deer Processing. The session is 3 hours long and there it's a fee of $100/person to attend. You will be provided with the information to make payment directly to Sabattus Deer Cutting after registration.Participants will leave with increased confidence in their ability to process their own wild game. Space is limited to 15. ****************************************************************************************************************The Maine Human Rights Act prohibits discrimination because of race, color, sex, sexual orientation, age, physical or mental disability, genetic information, religion, ancestry or national origin.Any person who needs accommodations to participate in a program should contact the office at 207-287-5220 or jaime.berard@maine.gov to discuss their needs in advance.
