Green Collective will welcome Chef Mary Cappelletti of Intentional Foods on June 13th for their very first chef pop-up at thir brand new Wash Park location. The evening will boast an incredibly delicious, one of a kind culinary expereince!

You're invited you to indulge in the intimate dining event wherein Cappelletti will showcase not only her cooking skills, but also fermention creations. Get ready to expereince fermented flavors and local produce like you never have as each of the 5 vegetarian courses will feature a fermented ingredient. But, don't let the potential for funky flavors scare you away. Fermented flavors can be bold, subtle, salty, tangy, or smooth, all depending on how they're prepared. This dinner will offer the chance to experience these flavors in a completely new light. We reccomend giving it a try!

If you're nervous about fermented flavors, the Inentional Foods instagram will give you a glimpse into how Cappelletti uses these ingredients. Many guests have left her meals saying it was the best meal they've had. This is your chance to expereince a meal from this new Denver chef!

Frequently asked questions

Can you accommodate dietary restrictions?

We sure can! Chef Cappelletti is happy to accommodate dietary needs including dairy free, vegan, and gluten free. Please notify in advance as these restrictions cannot be accommodated without advanced notice. If you have a different dietary need, please reach out.

Will there be beverages available?

We will have non-alcoholic beverages available. A Green Collective staff member makes kombucha and that will be available with your meal. We are currently working on permitting for alcohol, but it will likely not be available on the 13th.

Can I book for a big group?

Yes you can! We love big groups, food was meant to be eaten amongst friends, right? Right! Feel free to bring as a big a group as you'd like. Please note how many are in your group when purchasing tickets. We will arrange tables accordingly.

What if I'm not sure if I like ferments?

Cappelletti has converted many skeptics. Ferments can be bold like the sauerkrauts and pickles we're often familiar with. But, you can also experience ferments in much mellower ways. Fermented garlic enhancing a lemon pasta sauce, fermented kale in a rice dish, fermented tomatoes in a salad? Yum!
