Why is Macanese Batatada our go-to birthday cake? We'll show you why in the third installment of Baking with Bianca.

Macau—a pint-sized peninsula on China’s southern coast—is a city of many influences. Founded by Portuguese traders in the 1550s, the settlement was introduced to culinary traditions from Portuguese colonies: tubers from Brazil, spices from India, peppers from Africa and more all merged with native Cantonese herbs, vegetables and techniques. Batatada, a lime-glazed sweet potato cake, is a prime example of this mash-up. Its name comes from the Portuguese word for potato, but the ginger-spiced, coconut-laced cake is unique to Macau. We love it for its plush, moist texture and vibrant color, as well as for the recipe’s ease: softening sweet potatoes in the microwave and finishing it with an elegant, two-ingredient glaze make this cake an easy one to throw together for last-minute celebrations. Learn these tricks, and more, as Bianca Borges leads you through this third installment in our Baking with Bianca series. She’ll show you how to amp up its flavor with candied ginger and will provide a stovetop option for preparing your sweet potatoes. You’ll come away understanding why this has become our favorite sheet cake.
