Bonjour! I’m Estelle Tracy, achocolate sommelier and food writer based in Chester County, Pennsylvania. My chocolate journey started with the37 Chocolates challenge: in June of 2015, I committed to sample 37 US-made chocolates by my 37th birthday that Halloween. The life-changing journey revealed my passion for craft chocolate and the people behind these bars. I now create chocolate tasting events to share the diverse flavors of my favorite food.

An exploration of Brazilian flavors through four chocolate bars by La Brigaderie de Paris in France

Hi! I’m Estelle Tracy, an award-winning food writer and chocolate sommelier based in the Philadelphia area. As the founder of 37 Chocolates, my goal is to take you on memorable flavor journeys through cacao and chocolate.Since 2020, we’ve tasted dozens of products from makers near and far. Together, we’ve met the people behind your favorite food — chocolate!This month, I’m thrilled to introduce you to one of the most creative chocolate-makers in France, Marina Stroh-Ibri, founder and chocolate-maker of La Brigaderie de Paris in France.

A Brazil native, Marina has been sharing the flavors of her homeland in France since 2012. First known for her brigadeiros aka Brazilian truffles, she started developing a line of bean-to-bar chocolate back in 2018 using Brazilian cacao from Amazonia, Bahia, and Espirito Santo. After meeting her at the Salon du Chocolat in Paris last year, I fell hard for her beautifully molded bars and savory inclusions. Inspired by eponymous Brazilian dishes, the Feijoada and Moqueca bars blend masterfully crafted dark chocolate with black beans, puffed rice, and orange (Feijoada) and tomato, pepper, coconut, and coriander (Moqueca.) These stellar flavor combinations are some of the most audacious I’ve had in France.

During this 2-hour tasting, we’ll sample the following bars:<ul><li>70% Fazenda Camboa dark chocolate </li><li>70% Tocantins River dark chocolate </li><li>70% Feijoada dark chocolate with black beans, puffed rice, and orange</li><li>70% Moqueca dark chocolate with peppers, tomatoes, and coconut</li></ul>

Your tasting kit will be shipped to your home prior to the event.
