Otter Valley Farm in collaboration with John O'Mara will lead a 2 day workshop on animal processing. You'll camp on our beautiful farm in Comptche, CA and spend the weekend learning all about animal processing and rotational grazing.
In this interactive workshop, you'll get to participate in the harvesting of pasture raised lambs, utilizing every part of the animal from nose to tail using seam butchery. You'll learn to cook every part of the animal including traditional organ meat recipes. Two lamb-centric meals will be provided. There will be plenty of food to share and participants will get to take meat home. You will also have a chance to make dice out of bones and play to win one of the hides.

Weekend Schedule:
Friday Afternoon/Evening (optional arrival): arrival, fire circle
Saturday: Intros, meet the herd, harvest and skin the animals, organ meat and ribs supper
Sunday: Break down meat with seam butchery, lamb lunch, distribute meat to take home
