European Soups to Nourish Your Soul - Cooking Class with Kogetsu

Winter is soup season. Join Kogetsu on her culinary tour of Europe as she shares the skills of to create truly delicious, soul-satisfying winter soups. In this class you’ll learn techniques for building intense flavor in beloved, traditional soups including the light and delicious flavors of a traditional German Beer Soup, the comfort found in a well-made pot of French Lentil Soup, and the sun-warmed flavors and expanding textures in a simple bowl of Sopa de Ajo, a delicious Spanish garlic soup. These are soups you’ll make over and over again throughout our cold Hudson Valley/Berkshires winter, accompanied by a crusty bread.

• German Beer Soup (Biersuppe)
• French Lentil Soup
• Spanish Garlic Soup (Sopa de Ajo)

This demonstration class (plus lunch) is limited to ten people.

About Kogetsu:

Ko is a certified Ayurvedic Practitioner who is passionate about the power of food to heal. After her Ayurvedic Training she spent many years traveling around Europe honing her palate in Spain, Germany and Italy. From 2021 to 2023 she was the chef at Random Harvest, pumping out nourishing soups, flavorful salads and yummy little meals. Ko has spent the last few years catering for large and small events all through our community and expanding her knowledge of local edible plants and herbs - playing with the bounty that grows all around us. Get ready to taste your way into balanced and flavorful foods.
