ABOUT THE BOOKEssentials of Classic Italian Cooking is the definitive guide to Italian cuisine, widely regarded as one of the most important cookbooks ever published in the English language. Bringing together Marcella Hazan's two classic works into one authoritative volume, it covers everything from fresh pasta and risotto to braises, roasts, and the iconic tomato sauce made with nothing more than tomatoes, butter, and an onion. This is the book that taught a generation of home cooks how to cook Italian food the right way. ABOUT THE AUTHORMarcella Hazan was born in Cesenatico, Italy, and is widely considered the foremost authority on Italian cooking in the English-speaking world. She spent decades teaching and writing about the food of her homeland, and her books changed the way Americans think about Italian cuisine. Her approach was always rooted in simplicity, quality ingredients, and an unwavering respect for tradition. She passed away in 2013, leaving behind a legacy that continues to shape home kitchens around the world.
