ABOUT THIS EVENT

Fermentis Academy sessions are a day of immersive learning, sponsored by RahrBSG. This session will be held at the iconic Goose Island Barrelhouse in Chicago, and is designed to provide practical knowledge and insights to refine your process and perfect your lagers.

Our 2026 program is laser-focused on lager production, featuring the following sessions:

· Yeast & Fermentation Basics: What are yeast? Fermentation fundamentals and yeast metabolism.

· Intro to Lagers: Lager yeast taxonomy, history, and unique characteristics.

· Applied Research from Fermentis: Specialty lager studies, a deep-dive W-34/70 case study, the thiol-freeing power of SH-45, spunding/pressure fermentation, and the benefits of cold maturation.

· Sensory Workshop: Identifying and evaluating key lager flavor characteristics.

· Fermentation Byproducts: Understanding key metabolic byproducts—what they are and how to manage them.

· Guest Speaker from RahrBSG: Speaker will be Trevor Cowley, Sr. Director Research & Innovation. Topic: Malt Selection for Lager Production.

The day will conclude with a social gathering from 4:00 PM, featuring complimentary beers — a perfect opportunity to network and discuss the day's learnings.

Check-in: 8:00-8:30am (please arrive promptly)

Session: 8:30am-4:00pm

Social gathering: 4:00pm-5:00pm

Registration Fee: $48 per participant. Fee Includes: Full-day seminar, coffee/continental breakfast, taco lunch, and social time with (up to 3 complimentary beers).
