Chef’s Table at Monzú: An Intimate Dinner with Giovanni Mauro

Monzú has built a quiet reputation among locals as one of Las Vegas’ most interesting Italian kitchens - known for its house-fermented doughs, bold ingredient pairings, and a style that blends tradition with creativity.

Hosted as part of a curated dining series, for one night, we’re transforming that experience into something more personal.

This is a limited-seat, chef-led dinner hosted by Chef Giovanni Mauro, designed to feel less like a restaurant visit and more like a private dining experience.

Guests will enjoy a curated, multi-course tasting menu served family-style, highlighting seasonal ingredients and the flavors that define Monzú’s approach to Italian cuisine.

Throughout the evening, Chef Mauro will introduce the menu and join guests for a candid, interview-style conversation, sharing the stories behind the dishes, his background, and the influences that shape his cooking.
