Join us June 24 at 6pm for a four‑course, Silver Oak–paired seated dinner hosted outdoors on our Crooked Hearth Patio at the base of Beaver Creek Mountain. Founded in 1972 and long celebrated for its Cabernet‑driven winemaking, Silver Oak brings a legacy of American‑oak aging to this intimate evening. The menu moves through a thoughtful progression of courses, beginning with a chilled crab and cucumber preparation layered with chamomile, almond, and green apple. The second course features squab accented with cherry, barley, charred radicchio, and a violet‑sassafras jus. A dry‑aged strip follows, enriched with cocoa nib, bone marrow, smoked eggplant, and black garlic. The evening concludes with a pistachio‑crusted lamb rack complemented by charred allium, sunchoke, and mustard seed. Each course is paired with selections from Twomey and Silver Oak, creating a thoughtful interplay of cuisine and iconic California wines.
