From there, the experience deepens.
Guests move into the main dining space for a four-course dinner set within an environment that shifts with each course. Light moves beneath and around you, reshaping the room as each course is revealed.

OUR EXECUTIVE CHEF
Chef Jaimee Fuertes Skinner is a Filipino American chef, creative director, and founder of Calamansi. She has built a reputation for crafting experiences that are as intentional as they are soulful, rooted in heritage, sharpened by global technique, and guided by a deep respect for ingredients and place.
Her work draws from the landscapes that shaped her: the bright acidity of the Philippines and the seasonal sensibility of the Pacific Northwest. Her cooking is defined by clarity, balance, and memory, each dish carrying both structure and story.
Cheff Jaimee has been invited to appear on Cutthroat Kitchen and Hell’s Kitchen, and is recognized as a local celebrity chef for McDonald’s Northwest Corporation. A storyteller and community builder, Jaimee is part of a new wave of Filipino culinary voices shaping a more contemporary, expressive future for the cuisine.

Calamansi is an elevated Filipino culinary studio inspired by heritage, memory, and the ingredients of the Pacific Northwest.
Through rotating concepts—including After Dark, Chef’s Table, and Kamayan—each experience explores a different facet of Filipino flavor.
The approach is seasonal, immersive, and rooted in storytelling, honoring tradition while embracing evolution, and creating moments that bring people together together through culture, creativity, and shared experience.
